Cut the butter into smaller pieces and place it in a food processor together with flour and sugar. Process until it forms fine sand-like texture. If you don't have a food processor you can just mix the dough with your hands.
Now add 3 tbsp of ice cold water and mix until it looks crumbly.
Take out the dough on a work surface and form a ball.
Place the dough on a parchment paper that will fit on your baking tray and form a round shape with a rolling pin. (around 5 mm thick)
Destone and slice the plums.
Mix applesauce, almond flour, and sugar together.
Assembling the galette
Place the filling cream in the middle of the dough and spread it evenly leaving about 3 cm around the sides uncovered.
Arrange the plums over the filling and gently fold over the edges.
Brush the crust with some vegan butter or light olive oil and sprinkle over some sugar.
Bake for 25-30 minutes.
Notes Instead of plums, you can also use apples, pears or peaches. The variations are plenty.
